It's a wonderful place. Did you have the wine pairing? I don't think I've had a better one anywhere. And I can't believe it's been a decade since they opened, that's incredible. It's pointless making these sorts of predictions or statements but I genuinely don't see any reason why they shouldn't have three Michelin stars.
Unusually for this group, we didn't do the pairings, but their list was so awesome that we drank some stunners, and the somm service was among the best I've had anywhere. And I couldn't agree more re: stars. I know this is heresy, but I enjoyed it a lot more than L'Enclume, and if you compare it to Alain Ducasse or the Waterside, Moor Hall is laughably superior.
Agree about the somm service (and service in general), more about celebrating the wine rather than a brain dump of facts and the technical aspects of the vinification that you can endure in some high end places.
